Thanks Ell 🙏🏽. Good question - I forgot to mention it in the initial post. You can use the shredded breast meat in soups or your can make chicken floss out of it (which is the best use of it I think given it’s quite dry already). If you search chicken floss you’ll find a decent recipe but it basically involves shredding the chicken, seasoning it with mix of oyster sauce, soy, salt and sugar and cooking it in a pan with oil for a long time until dry and crispy. Once done you can use it in anything - soups, sandwiches, fried rice etc .
This sounds great, and not as complex as I expected.
Any suggestions of favourite ways to use the leftover cooked meat once your stock is strained? Thank you!
